Abstract: The food industry brings to consumers food products made in accordance with national and international hygiene standards wich represents a priority field within the economy. Training the workforce according to European quality standards ensures the qualitative and quantitative growth of food production.
The food industry has been in continuous development due to the use of biotechnologies. Food biotechnologies have a wide scope of exploitation throughout the world. In recent years, consumer requirements have shifted to products from natural sources and products obtained through "eco-friendly" technologies, so the use of natural compounds in food has attracted much attention from both consumers and food industry. In the bakery industry various biotechnology - inspired solutions have already been implemented to reduce the carbon footprint by reducing food waste and loss, lowering energy consumption, and creating clean(er)-label products.
Biotechnology can offer solutions to reduce food loss and waste along the value chain, from production to consumer.
